We interviewed our friend Kelly of @nurturingbodyandmind about her family and their love for our ramen. Here’s what she had to say!

About Kelly’s family:

“We are a family of five! We love to spend time at home (home is where the heart is) but we also like to be outdoors. Going for hikes, walks around our neighborhood or playing in our backyard. The kids have mini dirt bikes so they love to ride. We also love spending time at the lake on our boat and swimming! I’m currently teaching the kids the basics on cooking and they love to help with meals. They also love to color, read and play the Wii on occasion.”

How Kelly started her blog:

“I started @Nurturingbodyandmind because I wanted to hold myself accountable with eating healthy after my son was born (he’s now 7!) It became a passion of mine using simple ingredients to make healthy food appealing. Typically the stigma is that healthy food is boring but I have proven to many people that eating healthy does not have to be boring or tasteless. Less is more! Using herbs and seasonings can elevate your food to a whole new level. It’s also important to myself and my kids that they understand the meaning of balance. We eat very healthy but we also don’t deprive them of treats! Nor I!”

Sharing meals as a family:

“When we eat together as a family we like to talk about our day. Food brings people together and we make sure to get our kids involved all the way from preparing our food to cleaning up after. They love to help set and clear the table. To make eating together work with how busy life can be we try and set aside enough time to be together before we move on to the next activity for our day or evening. We like to set aside a certain amount of time for eating together and we make sure not to have any distractions like the television so we can give ourselves undivided attention.”

Why is Mike’s Mighty Good a great meal option for kids?

“My kids love Mike’s Mighty Good ramen so much. For lunch it’s nice to switch up their usual peanut butter and jelly for a healthy ramen. I add spinach for extra nutrients and sometimes will add a boiled egg and avocado. On the nights my husband works late and is gone for dinner, Mike’s Mighty Good comes in so handy. It takes only minutes to make and can be incredibly versatile with the unlimited options of different toppings you can add.”

As a mom, do you feel confident and good feeding your kids Mike’s Mighty Good ramen?

“I feel very confident feeding my kids Mike’s Mighty Good ramen. I like that the noodles are made from scratch, steamed and never fried. I like the clean ingredients and I appreciate the lower sodium levels compared to some of the other brands available. Their ingredients don’t compare to Mike’s Mighty Good or how rich and tasty the broth is.”

How Kelly & the kids likes their Mike’s Mighty Good:

“I always add spinach, avocado and a boiled egg. That is my go to for all of us because it’s simple and I most often always have those ingredients on hand in my kitchen.”

Favorite flavors & recipes:

“Ahhh I have so many! I would have to go would be the Pork Tonkotsu as my number 1 favorite but quite honestly they are all amazing. So hard to choose! I have several photos on my Instagram feed @nurturingbodyandmind which show some of my most favorite creations, one of them including dumplings into my ramen. So delicious!”

Adding an egg to any meal is a solid idea in my opinion. Adding a fried egg to your ramen is even more of a solid idea 💯 It’s a must try! . What you need to make this bowl of ramen: . 1 spicy pork tonkostu @mikesmightygood pillow pack (code NBODYMIND for discount at checkout) 1/4 cup sliced green onions 1 pasture raised egg Squeeze from half of a lemon Small bunch of cilantro 1 small garlic clove-will press through garlic press 1 teaspoon sesame oil Half teaspoon of spicy sesame oil 1/2-1 teaspoon of ginger Quarter cubed avocado . Directions: Boil water for ramen. While water heats up, heat a small cast iron pan on medium heat and add both sesame oils . Once hot crack egg onto one side of pan and crushed garlic to other side. Once garlic is fragrant add green onions and ginger. Sauté for just a few minutes and set aside. Let egg cook until white is set and cooked to your liking . Add ramen noodles to boiling water. Cook according to package directions and add spice/oil packet. Pour into bowl and add toppings. Carefully place your egg on top. Squeeze lemon over your egg and broth. ENJOY! . Best part about the bowl is @mikesmightygood broth (AD) It’s rich and full of flavor. Do you sip on your broth as you go or do you wait until you’ve finished your toppings? I like doing both! Sip as I go and then drink the rest when I’m done with the toppings. There isn’t a right or wrong way. This stuff is GOOOOOD #nurturingbodyandmind #savorythegood

“What you need to make this bowl of ramen:
.
1 spicy pork tonkostu @mikesmightygood pillow pack
1/4 cup sliced green onions
1 pasture raised egg
Squeeze from half of a lemon
Small bunch of cilantro
1 small garlic clove-will press through garlic press
1 teaspoon sesame oil
Half teaspoon of spicy sesame oil
1/2-1 teaspoon of ginger
Quarter cubed avocado .
Directions:
Boil water for ramen. While water heats up, heat a small cast iron pan on medium heat and add both sesame oils

Once hot crack egg onto one side of pan and crushed garlic to other side. Once garlic is fragrant add green onions and ginger. Sauté for just a few minutes and set aside. Let egg cook until white is set and cooked to your liking

“it may be hot today here in Cali but i still crave ramen and today was the day i made it happen. opened up my fridge and saw a bunch of possibilities with my toppings so i brought them to life! @mikesmightygood is our fav ramen in our house. it’s made with simple ingredients and is super comforting (not to mention so easy to make!) my kids are beyond obsessed and ask for ramen all the time! i love their noodles bc they’re steamed not fried and made from scratch. how cool is that?!”
