Ginger Garlic Ramen
1 small shallot, chopped
1 stalk green onion, chopped
1 tsp minced garlic
1 tsp minced ginger
Baby bok choy
1/2 cup shiitake mushrooms
1/4 block tofu, drained and pressed
1 tbsp soy sauce
1 soft boiled egg
Fried shallots (garnish)
Red chili flakes (garnish)
In a pot over medium-high heat, heat 1 tbsp oil and saute shallots until fragrant. Stir in garlic, ginger, and the white parts of the green onion.
Add 1.5 cups of water to the pot and stir in flavor packet. Bring to a simmer and add noodles, baby bok choy and mushrooms. Simmer until noodles are cooked through. Transfer to a bowl.
In a pan over high heat, add remaining oil. Add tofu and soy sauce to the pan and saute until all sides are golden brown.
Add tofu to the bowl with other ramen ingredients. Garnish with soft boiled egg, fried shallots, red chili flakes, and green onion.
