This Thai curry inspired instant ramen bowl brings the full flavors of a Thai curry dish from the flavorful curry spices to the richness of the coconut curry stir fry mix topped off with a hint of lime and cilantro, your mouth will be bursting with flavors!
Heat a frying pan over medium high heat with 1 tbsp ghee butter. Once the butter has melted and evenly coated the frying pan, cook the stir fry vegetables for 5 minutes. Then add in the coconut curry sauce to taste. Set aside
Slice the 1/4 lb of chicken breast meat. Set aside.
Using the same frying pan as the veggies, heat up 1 tbsp of ghee butter over medium high heat. Cook the chicken slices thoroughly. Season with salt, pepper and curry powder.
Cook ramen according to package instructions. We used the stovetop to boil 1 1/4 cup of water and then cooked the noodles for 3 minutes.
Once the noodles are done cooking, add in the flavor and oil packets.
Transfer ramen into a serving bowl and top if off with the stir fry veggies and curried chicken.
Add in cilantro and a squeeze of lime to taste. Enjoy!
