Chicken Lemongrass Ramen


Honey, ginger, and chicken are the perfect additions to our coconut milk lemongrass ramen! Add some greens and a soft-boiled egg and you'll be in homemade ramen heaven.


  • 1 Mike's Mighty Good coconut milk lemongrass ramen cup
  • 1 chicken breast
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp cayenne
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 2 handfuls baby spinach
  • chopped green onion
  • 1 soft boiled egg
  • 1 tbsp chili oil
  • Togarashi ( garnish )

This Recipe Includes Mike's Mighty Good Limited Edition Vegetarian Coconut Milk Lemongrass Ramen


  1. Cover chicken breast in salt, pepper, cayenne, ginger, garlic, and honey mixture.
  2. Heat oil in a medium-high heat pan and sear chicken breast. Keep in the pan until cooked through. Remove from pan and let it rest and then slice.
  3. Saute baby spinach in a pan on medium heat with some oil.
  4. Prepare Mike's Mighty Good coconut milk lemongrass ramen cup according to package instructions.
  5. Transfer ramen to a bowl and add chicken, spinach, green onion, soft-boiled egg, chili oil, and togarashi.
  6. Enjoy!
