Kimchi & Tofu Dumpling Ramen


Dumplings are always, always, always the right choice. These vegetarian kimchi & tofu dumplings are super easy to make and the perfect addition to our kimchi ramen! Grab some extra toppings, get comfy, and enjoy this bowl of goodness.


  • 1 block firm tofu ( drained and pressed )
  • 3 tbsp vegetable oil
  • 2/3 cup shallots ( chopped )
  • 3 cloves garlic ( minced )
  • 2 tbsp ginger ( minced )
  • 1 carrot ( peeled & grated )
  • scallions ( sliced )
  • 3/4 cup kimchi ( chopped )
  • 2 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1 pack Dumpling wrappers
  • 1/4 cup water
  • 1 Mike's Mighty Good Kimchi Ramen Noodle Soup Pillow Pack
  • 1 tbsp chili oil

  1. Heat 1 tbsp of oil in a pan on medium heat. Add in shallots and cook until fragrant. Add in garlic and ginger. Add carrots and scallions to the pan and cook for 1 minute. Remove from pan and let cool.
  2. Put tofu in a mixing bowl and break it up until it is a crumbly texture. Add in cooled vegetables, kimchi, sesame oil, salt, coriander, and soy sauce. Mix ingredients together.
  3. Wet the edge of dumpling wrappers. Fill the wrappers with prepared filling. Fold in half and pinch top edge together, then bring the bottom corners together.
  4. Heat 1 tbsp of oil in a pan on medium-high and add dumplings to pan. Cook for 3 minutes until golden.
  5. Add 1/4 cup water to the pan and cover with a lid for about 5 minutes. Remove lid and finish cooking until water is evaporated.
  6. Drizzle with chili oil. Enjoy dumplings by themselves or add to a bowl of Mike's Mighty Good kimchi ramen with kimchi, green onion, and black sesame seeds.
