Lotus Root Avocado Vegetarian Ramen Bowl

Description

This delicious vegetarian cup ramen combines a classic Asian inspired lotus root with the Californian love for avocado to bring to you this fusion dish.

Ingredients

  • 1 Mike's Mighty Good Vegetarian Vegetable Ramen Cup
  • 1/2 avocado
  • 1/3 cup cremini mushrooms
  • pepper
  • vinegar
  • 1 clove garlic
  • lotus root

Instructions

  1. Cut up lotus root into thin slices. Place sliced lotus root into vinegar water and drain well just before cooking.
  2. Heat up frying pan with oil. Add in minced garlic and stir fry until oil is fragrant.
  3. Add in mushrooms and lotus root slices in a single layer and cook until lotus root changes color (translucent looking). Turn each slice over carefully and cook for a few more minutes.
  4. Cook craft ramen according to package instructions.
  5. Slice avocado while waiting for ramen to cook.
  6. Transfer ramen to a bowl and top off with avocado, lotus root, sauteed mushrooms and sprinkle some pepper on top for some added taste! Enjoy and snap a picture for Instagram.
