Red Curry Shrimp Ramen

  • 4 jumbo shrimp
  • 1 tbs red curry paste
  • 1/2 cup coconut milk
  • 1 tsp minced garlic
  • 1 tbs butter
  • 2 tbs olive oil
  • 1/4 cup zucchini, sliced
  • 1 green jalapeño, sliced
  • Cilantro, garnish

  1. On medium-high heat, add minced garlic and butter to pan, sauté shrimp. After 4 minutes, add zucchini
  2. In a pan add red curry paste with coconut milk, bring to a boil in pan
  3. Add shrimp and zucchini to curry sauce, bring to a boil.
  4. Prepare Mike's Mighty Good Ramen according to instructions, add in red curry/coconut milk mixture
  5. Assemble bowl: Shrimp, zucchini, jalapeños, cilantro
