Roasted Garlic Tofu Achaar Vegetarian Cup Ramem

Ingredients

  • 1 Mike's Mighty Good Vegetarian Vegetable Craft Ramen
  • 1/4 block firm tofu ( cubed )
  • 1 handful cilantro
  • 1 tbsp Brooklyn Delhi Roasted Garlic Achaar
  • 1 egg
  • jalapeno ( optional )

Instructions

  1. Start by boiling water in pot. Be sure to have enough water to submerge egg in.
  2. Once water is boiling, reduce the heat to a simmer and gently lower egg into pot using a ladle and set a timer for 6 min 30 seconds. When the timer goes off, run egg under cold water for 1 minute or submerge in an ice bath for 1 minute.
  3. Prep the tofu by first draining out the water, then cut the tofu into cubes. Rinse the cilantro and chop it up. Set aside.
  4. Heat up a frying pan over medium-high heat. Toss in the tofu and 1 tbsp of the roasted garlic achaar. Cook until the tofu is coated in the sauce.
  5. Cook craft ramen according to package instructions.
  6. Transfer ramen to a bowl, top it off with tofu, cilantro, eggs and jalapenos. Enjoy!
