  • 3 soft boiled eggs
  • 1/3 cup shallots
  • 3 tbs olive oil
  • 1 tbs thai fish sauce
  • 1 red chili, sliced
  • chopped cilantro for garnish


  1. Sauté shallots in vegetable oil for 4-5 min until brown and crispy
  2. Peel soft-boiled eggs and cook in olive oil until golden brown
  3. Slice eggs in half and place in a plate
  4. Drizzle eggs with Thai fish sauce, shallots, cilantro, red chili peppers slices
  5. Enjoy!
