Tahini Kabocha Squash Ramen


Tahini sauce + roasted kabocha squash + miso ramen = flavor perfection. This recipe is super easy and absolutely delicious. The flavors of fall squash are elevated with a savory tahini sauce and miso flavor ramen. We're obsessed.


  • 1 kabocha squash
  • 1 tbsp sesame oil
  • 1/4 cup tahini
  • 1 clove garlic ( minced )
  • 1 tsp ginger ( minced )
  • 2 tsp sesame oil
  • 2 tsp soy sauce
  • juice from 1/2 lemon
  • 2 tbsp water
  • 1 Mike's Mighty Good Savory Miso Ramen Pillow Pack
  • green onions ( sliced )
  • corn
  • black sesame seeds ( garnish )

  1. Preheat oven to 400F. Cut kabocha squash into slices and lay them out on a nonstick or lined baking sheet.
  2. Drizzle squash with sesame oil and bake for about 30 minutes, until squash is tender.
  3. Combine tahini, garlic, ginger, sesame oil, soy sauce, lemon juice, and water to make sauce. Add more water as needed to get the right consistency. Drizzle baked squash with sauce.
  4. Prepare Mike's Mighty Good Savory Miso Ramen Pillow Pack according to package instructions.
  5. Assemble bowl: Add corn, green onion, kabocha squash, more tahini sauce, and black onion.
  6. Enjoy!
