Ingredients
- 2 tofu, cubed
- 1/4 cup shiitake mushrooms
- 1/4 cup green onions
- 1 baby bok choy
- red chili flakes
- 1 tbs olive oil
- 1 tbs soy sauce
- black pepper

Instructions
- Drain tofu and dice 2 slices into small cubes, marinate in black pepper and soy sauce
- Sauté tofu in olive oil, cook evenly on medium heat until crispy for about 7-8 min
- Sauté shiitake mushrooms & baby bok choy in olive oil for 3-5 min on low-med heat
- Prepare Mikes Mighty Good Vegetarian Vegetable Ramen Soup Cup
- Assemble bowl: crispy tofu, baby bok choy, shiitake mushrooms, green onions, red chili flakes
