Ingredients

  • 2 tofu, cubed
  • 1/4 cup shiitake mushrooms
  • 1/4 cup green onions
  • 1 baby bok choy
  • red chili flakes
  • 1 tbs olive oil
  • 1 tbs soy sauce
  • black pepper

Instructions

  1. Drain tofu and dice 2 slices into small cubes, marinate in black pepper and soy sauce
  2. Sauté tofu in olive oil, cook evenly on medium heat until crispy for about 7-8 min
  3. Sauté shiitake mushrooms & baby bok choy in olive oil for 3-5 min on low-med heat
  4. Prepare Mikes Mighty Good Vegetarian Vegetable Ramen Soup Cup
  5. Assemble bowl: crispy tofu, baby bok choy, shiitake mushrooms, green onions, red chili flakes
  6. Enjoy!
