Coconut Curry Ramen

Enjoy this easy and cozy coconut curry ramen anytime. It's warming and nourishing and totally delicious. The chicken is optional and can be taken out for vegans or vegetarians out there - the recipe will still be absolutely amazing. We love this recipe with our vegetarian vegetable ramen cup as well as our fried garlic chicken ramen pillow pack. 

 Coconut Curry Ramen

INGREDIENTS

2 Packs of Mike's Mighty Good Ramen - any flavor

100g ground chicken

2 garlic cloves - minced

2 tbsp red curry paste

1/2 tbsp curry powder

2 tbsp soy sauce

1/2 cup chicken broth

1/4 coconut milk

1 tbsp cooking vinegar

1 MMG soup base & seasoning oil

Green onions

Peanuts

 

 

METHOD

Medium heat, saute minced garlic with ground chicken. Once chicken is cooked, at red curry paste, curry powder and soy soy sauce. Mix until chicken is evenly coated. Add chicken broth, coconut milk, vinegar, soup base and seasoning oil. When it comes to a boil and ramen. Cook until ramen noodles are cooked or until sauce thickens. Top with green onions and/or toasted peanuts.
