Kimchi Ramen Omelette

We’ve seen a lot of ways to use ramen, but wrapping it up in an omelette? That’s one of our favorites. This one’s built around our Vegetarian Kimchi Ramen, folded into eggs with melted cheese and crispy bacon or sausage. It’s the kind of thing you can throw together in 10 minutes and still feel like you actually made something fancy.

This isn’t a side dish. It’s not an afterthought. It’s a full-on ramen omelette, and yeah, it’s as good as it sounds.

What You’ll Need

  • 1 package of Mike’s Mighty Good Kimchi Ramen
  • 2 eggs
  • A handful of shredded cheese (whatever you have — cheddar, mozzarella, etc.)
  • 2 strips of bacon or 1 sausage, cooked and chopped
  • Half the Mike's Mighty Good soup base + seasoning oil (save the rest for something else)

How to Make It

Step 1: Cook the noodles
Start by boiling the ramen noodles like usual, but don’t add the soup base or oil yet. Once they’re cooked, drain them. Then mix in half of the soup base and the seasoning oil. Set the noodles aside.

Step 2: Prep your pan
Crack the eggs into a bowl and whisk them until smooth. Heat a non-stick pan over medium heat. Add a tiny bit of oil or butter if your pan needs it.

Step 3: Pour and swirl
Pour the eggs into the pan and move the pan around so the eggs coat the whole surface. Let it cook until the edges are set but the middle is still soft.

Step 4: Add the fillings
On one half of the omelette, layer the ramen noodles, shredded cheese, and bacon or sausage. Let it sit for a minute so the cheese starts to melt.

Step 5: Fold and press
Gently fold the other half of the omelette over the filling. Press down lightly with a spatula so it holds together and finishes cooking through.

Step 6: Serve
Slide it onto a plate. That’s it. No need to garnish unless you’re feeling fancy. Then top with some sesame seeds and ketchup drizzle.

A Few Tips

  • If you want a little heat, sprinkle on some chili flakes or drizzle on chili oil before folding.

  • Swap the bacon or sausage for a veggie version if that’s more your thing.

  • This works great with leftover meat or veggies from the night before.
