Veggie Ramen Noodle Stir Fry
It’s summer and it’s starting to heat up! Don’t feel like eating soup on a hot day? You can still enjoy your favorite ramen by making the flavor packet into a sauce instead of a broth. This recipe is full of flavor and undeniably good, saucy noodles. Add in some veggies and be on your way to a delicious lunch in 15 minutes. The best part? This one is vegetarian and vegan-friendly.
First, get a small mixing bowl and add in sweet chili sauce, chili paste (we love to use sambal olek but your favorite chili paste works fine), soy sauce, and the Mike’s Mighty Good vegetarian vegetable flavor packet & oil packet. Whisk together until everything is combined well and set aside for step 3.
Next, heat your favorite cooking oil in a pan over medium-high heat. We love avocado oil, but any will work just fine. Add in some minced garlic and about a cup of chopped baby bok choy and the white parts of a green onion (chopped). Sauté for a couple minutes until bok choy is starting to cook through.
While you’re cooking your veggies, bring a pot of water to a boil on another burner and cook your ramen noodles. Drain all the water and save the noodles for the next step.
Reduce your stove’s heat to medium and add cooked ramen noodles to the pan. Pour the sauce over everything and start stirring. We like to use chopsticks for this step, but you could also use tongs or a fork. Keep sautéing/mixing together until the noodles are well-coated in the sauce.
Transfer the noodle stir fry to a bowl. Garnish with the green parts of the chopped green onion and sesame seeds. If you want an extra kick, drizzle with a little chili oil. Enjoy!
