Sichuan Bang Bang Ramen
This spicy and creamy ramen noodle dish is the ideal way to use up leftover chicken. Bang bang chicken is a popular Sichuan Chinese dish of tender shredded chicken in a spicy, nutty, and tangy sauce, often served with julienned cucumber.
We're taking this deliciously flavorful dish and serving it over a bed of perfectly chewy ramen noodles.
We're using Mike's Mighty Good chicken ramen to give this dish an extra savory, umami flavor without taking away from the flavors of the sauce. Cook ramen noodles, leaving out the flavor packets for later.
For the sauce, mix peanut butter and hot water until smooth. Add chili oil, gochugaru, soy sauce, and flavor packets. Slice cucumbers into thin matchsticks.
Mix the sauce into the ramen noodles until evenly coated. Top with shredded chicken, cucumbers, and toasted sesame seeds.
