Corn Cheese Ramen Fried “Rice”
Kimchi fried rice made from ramen noodles PLUS corn cheese? There's so much going on in this recipe, it's a delicious punch of flavor. Creamy, spicy, salty, and a touch sweet, your tastebuds will be on a ride.

To make the ramen fried "rice," cook fried garlic chicken ramen noodles until just soft and cut into bite-sized pieces with kitchen scissors. Set that aside.
Fry up some spam, and when browned, add kimchi, green onions, ramen pieces, half soup base and seasoning oil packets. Your fried "rice" is complete, and it's onto the corn cheese.
Combine corn kernels, Japanese mayo, sugar, and mozzarella cheese in a microwave-safe bowl and heat until melted together. Plate and enjoy this tasty meal!
