Spicy Miso Mushroom Ramen
This spicy miso mushroom ramen with an Onsen egg is a must try. It's ultra savory, packed with umami flavor from mushrooms, miso, and soy sauce.

Gather your ingredients and let's walk through the recipe. Start off by sautéing garlic, shiitake mushrooms, and scallions in a pot. Then add in miso paste, soy sauce, and water, stirring until everything is combined.
Bring the liquid to a boil and add in your Mike's Mighty Good miso ramen, including both the flavor packet and seasoning oil. Cook until the noodles are your desired texture, and the base of your bowl is done.
For toppings, we used an Onsen egg, cooked bok choy, fresh green onions, seasoning, and chili oil. Use whatever ramen toppings strike your fancy.
This ramen bowl is vegetarian, and you can make it vegan by simply omitting the egg.
