Vegan Crispy Tofu Ramen Stir Fry
Vegan stir fry can be a boring pile of plain noodles and vegetables, but not this one. This one features crispy tofu, a killer sauce, succulent vegetables, and bouncy instant noodles.

Start by cooking just the noodles in your cup of vegetable ramen, putting the flavor packets to the side. Prepare a sauce by mixing soy sauce, sesame oil, chili oil, Chinese vinegar, and sugar.
Then, coat cubes of tofu in cornstarch (this is the secret to making it crispy), and cook until golden brown on all sides. Saute garlic, mushrooms and bok choy, then add in tofu and noodles. To finish it off, pour the sauce over everything and top with sesame seeds.
