Vegan Miso Ramen
We added all the toppings to this bowl to complement our vegetarian miso ramen! Mushrooms, bok choy, and tofu make up your new favorite vegan ramen meal.
- 1/2 cup shiitake mushrooms
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
1 block extra firm tofu (drained and cubed)
Baby bok choy
1 tbsp furikake (garnish)
Heat sesame oil in a pan over medium heat and saute mushrooms.
Remove mushrooms from pan and saute baby bok choy in remaining oil.
Add vegetable oil to pan and saute tofu until each cube is golden on all sides.
Prepare Mike's Mighty Good Vegetarian Miso Ramen Cup according to package instructions.
Transfer ramen to a bowl and add tofu, bok choy, mushrooms, and furikake.
