7 Kimchi Ramen Recipes

Kimchi is a Korean dish of fermented vegetables, most commonly Napa cabbage, but others like radish can be used, too. The vegetables are combined with flavors like garlic, ginger, chili peppers, and salt. This mixture is fermented, which preserves it and also makes it a gut-healthy probiotic food!

Like other fermented foods (think pickles), kimchi is sour and salty. It can also be spicy and sweet depending on the flavors used. 

This Korean side dish sidekick packs a powerhouse punch of flavor right to the mouth. We love the contrast it adds to rich ramen recipes!

You can add kimchi to any bowl, of course, but these seven recipes featuring kimchi as a main or supporting character have been crafted to give you the best balance of flavors.

1. SPICY KIMCHI NOODLES

Ramen in hot broth isn’t ideal on the hottest of days, but you can still make a fire Mike's Mighty Good ramen dish without the broth. This recipe uses our entire kimchi ramen pillow pack to make noodles with a sweet and spicy sauce. Super quick, easy, and delicious!

Simply cook your perfectly chewy noodles like pasta, prepare your sauce and fully enrobe your noodles in it, and assemble your bowl with toppings. We suggest a soft boiled egg, chopped kimchi, chopped green onion, and black sesame seeds.

2. KIMCHI CHEESE CRAFT RAMEN

Do cheese and ramen go together? Yes, yes they do. This recipe combines the flavors of creamy cheese, tangy kimchi, and umami shiitake mushrooms.

Use Mike's Mighty Good Vegetarian Kimchi Ramen as a base and tofu for protein in this vegetarian bowl. You might be surprised at just how much flavor and creaminiess American cheese adds to a bowl of ramen.

3. SPICY VEGETARIAN KIMCHI RAMEN BOWL

This bowl is fit for vegetarians and vegans: it’s 100% plant-based. We used our Kimchi Ramen Pillow Pack made with organic noodles and topped it with tofu, mushrooms, and kimchi. 

This veggie-packed recipe only takes about 10 minutes to make – we love an easy, tasty ramen dish! Pan fry your tofu in sesame oil, cook the mushrooms and noodles, and then top with chopped kimchi and green onions. 

4. SHORT RIB RAMEN

Mike's Mighty Good spicy beef ramen noodle cup makes the ideal noodle and soup base to build your dish upon. Kimchi isn’t the star of this recipe; that would be the short ribs. But it does play an important balancing role to offset the rich meatiness of the rest of the dish. 

Marinate the short ribs in Gochujang, garlic, sriracha, and olive oil. Sear them on both sides. Prepare your noodle cup according to instructions. You’re ready to assemble your bowl: combine noodles + broth, short ribs, kimchi, green onions, soft boiled egg, and garnish with sesame seeds.

5. SOONDUBU RAMEN

Soondubu is a spicy Korean stew featuring silken tofu. Our version has kimchi, zucchini, and enoki mushrooms. We’re bringing the spicy, comforting flavors of soondubu to your ramen bowl.

Our kimchi ramen was made to be the soup base for soondubu. This recipe is made in one pot and couldn’t be easier: just boil all the ingredients together until fully cooked and enjoy! 

6. BANG BANG CAULIFLOWER RAMEN

Bang bang cauliflower is similar to buffalo cauliflower but with an Asian-inspired flavor profile. It’s incredible on its own, but even better served with kimchi on top of a bowl of ramen. We used our vegetarian vegetable ramen soup for this recipe.

This is another dish where kimchi is a supporting player, but very important nonetheless. The sour, spicy crunch plays off the savory breaded cauliflower.  

7. KOREAN ARMY STEW

We’re not gonna lie, Korean Army Stew has a lot going on, but that’s what makes it so great. Take traditional American wartime foods like Spam, baked beans, and American cheese, and mash them together with typical Korean ingredients like kimchi, rice cakes, and tofu.

Everything is cooked together in one big pot, including Mike’s Mighty Good kimchi ramen, to meld into one big comforting stew. If you’re extra brave, toss a couple of slices of American cheese on top to melt into the soup. You’re gonna want to grab a few friends and make this together.
