The key to the perfect mayo ramen recipe is good mayo. While regular old store bought mayo is fine for a lot of things, it's probably not the best option for a decent bowl of ramen. What you really need for a fire bowl of mayo ramen is Kewpie Mayo or something similar.

What is Kewpie Mayo?

Kewpie mayo is hands down one of the best mayos to have ever existed. This incredible Japanese mayonnaise has been in production since  1925 and was created by Toichiro Nakashima after tasting mayonnaise in America and deciding to bring a high-quality mayo product back to Japan.

You may think all mayo is the same but you would be wrong. Kewpie mayo is an incredible condiment, and while you might not want to replace all of your mayonnaise with Kewpie, it works better than traditional mayo in so many places.

It boils down to a few specific things that make this Japanese mayo superior to almost all other mayos:

1. It's got a more acidic, brighter flavor.

Kewpie mayo has a brighter, more vibrant flavor than other mayonnaise primarily because of the rice wine or apple cider vinegar used in its production. This gives it an insanely craveable quality that keeps you coming back bite after bite.

2. Kewpie Mayo comes in a super cool bottle.

Kewpie mayo has some of the most iconic packagings in food today. With a hyper identifiable soft plastic bottle and a logo that is essentially a baby doll with angel wings, there's nothing quite like kewpie mayo. Making Kewpie Mayo Ramen is incredibly easy. All you do is mix a ramen seasoning packet with 1 egg yolk and 1/2 a cup of mayo, then pour boiling water into the paste to create your rich, flavorful kewpie mayo broth. Once you've created the mayo ramen broth you can add cooked ramen noodles and top your mayo ramen bowl with everything from roasted meat, nori sheets, or even a Japanese onsen egg for a crazy rich bowl of ramen goodness.

The process behind mayo ramen is pretty simple. By creating a paste of the seasoning packet, mayo, and raw egg yolk and then pouring almost boiling water directly into the bowl you can emulsify the ingredients into the broth without overcooking the egg yolk.

Once you've created an absolutely fire kewpie mayo ramen broth you can add your cooked noodles and top the ramen with whatever you like. I personally like to top all my ramen bowls with some sliced green onions, a sheet of nori, a soft boiled egg, but you can go with whatever ingredients you think will blow your taste buds away.

How to make instant ramen with Kewpie Mayo.

Step 1: Open your pack of instant ramen and separate the noodles, and seasoning packet.

Step 2: Bring a pot of water to a boil and prepare the noodles.

Step 3: While the noodles are boiling combine the seasoning packet, egg yolk, chopped garlic, and kewpie mayo together in a bowl and whisk into a paste.

Step 4: Once the noodles have finished cooking, pour 2 cups of the boiling water into the seasoning/mayo paste and whisk until it forms a smooth, thick broth.

Step 5: Allow the broth to steep for 30 seconds before adding the noodles and enjoying!

    Ingredients

    Instructions

    1. Bring a small saucepan of water to a boil.
    2. Open the ramen package and separate the seasoning pack and the noodles.
    3. Once the water is boiling, place the noodles into the pot and cook them until they are tender.
    4. While the noodles cook, combine the seasoning packet, minced garlic, mayo, and egg yolk in a bowl and whisk vigorously with a fork or whip.
    5. Once you've formed a mayo/egg yolk/seasoning paste, allow the noodles to finish cooking before preparing the broth.
    6. Once the noodles are finished, ladle 2 cups of hot water from the noodle pot into the bowl with the seasoning paste and mix well.
    7. Strain the noodles away from the rest of the water in the pot and place the cooked noodles into the bowl of kewpie mayo ramen broth.
    8. Top your ramen with whatever toppings, additions, or seasonings you prefer, and enjoy your kewpie mayo ramen!
