To prepare lotus root, slice it thinly and place in vinegar water until ready to cook. Saute garlic, mushrooms, and lotus root together until lotus root is translucent.
Prepare Mike's Mighty Good vegetarian vegetable ramen according to instructions.
Assemble your bowl with ramen, lotus root and mushrooms, sliced avocado, and a sprinkle of black pepper.

Lotus Root Avocado Vegetarian Ramen Bowl
This delicious vegetarian cup ramen combines a classic Asian inspired lotus root with the Californian love for avocado to bring to you this fusion dish.
- 1/2 avocado
- 1/3 cup cremini mushrooms
- 1 clove garlic
- lotus root
Cut up lotus root into thin slices. Place sliced lotus root into vinegar water and drain well just before cooking.
Heat up frying pan with oil. Add in minced garlic and stir fry until oil is fragrant.
Add in mushrooms and lotus root slices in a single layer and cook until lotus root changes color (translucent looking). Turn each slice over carefully and cook for a few more minutes.
Cook craft ramen according to package instructions.
Slice avocado while waiting for ramen to cook.
Transfer ramen to a bowl and top off with avocado, lotus root, sauteed mushrooms and sprinkle some pepper on top for some added taste! Enjoy and snap a picture for Instagram.
