Vegan Tomato Ramen
This veggie-packed ramen soup is comforting yet light, savory yet sweet. The freshness of tomatoes, mushrooms, and bok choy brighten up this ramen bowl.
For a little bit of extra flavor, we recommend using Mike's Mighty Good kimchi ramen pillow pack, but any flavor will do.
This recipe is so quick and easy – it only takes about 20 minutes. Start by boiling
tomatoes, tomato paste and sugar in a pot of water. Once the tomatoes have cooked down, add in your
mushrooms and ramen packet. Throw in the bok choy for the last couple minutes of cooking and you're done!
