In a pan over medium heat, saute both types of mushrooms in soy sauce.
Add 2 cups of water, oil packet, flavor packet, and minced garlic to a pot over medium-high heat. Stir in tahini and bring to a simmer.
Add noodles to simmering broth. Once they are cooked through, turn off the heat and add spinach and cilantro to the pot. Once spinach is wilted, transfer ramen to a bowl.
Assemble bowl: add green onion, mushrooms, soft boiled egg, chili oil, and fried garlic.
