Ginger Scallion Ramen

This simple recipe pairs a tasty ginger scallion sauce with vegetarian soy sauce ramen inspired by shoyu broth. This easy recipe is vegan-friendly and also works as a great base to add any proteins, vegetables, or other ramen toppings.

Take the noodles out of a cup of Mike's Mighty Good vegetarian soy sauce ramen and boil until soft. While the ramen is cooking, make the ginger scallion sauce by combining half of the ramen seasoning packet, ginger, garlic, green onions, soy sauce, Chinese vinegar, sesame oil, and a touch of sugar and black pepper.

Now here's the fun part: heat up oil in a pot and pour over the sauce. It WILL sizzle! Pour this sauce over your cooked and drained noodles, then top with more green onions and a drizzle of chili oil.
