Description
Peanut butter ramen is a definite favorite, but we switched things up and used a cashew butter in this ramen recipe. Nutty flavor is complimented with super flavorful chicken, some veggies, and a soft boiled egg. This is an easy recipe that you can get super creative with!
Ingredients
- 1 Mike's Mighty Good Savory Miso Ramen Pillow Pack
- 2 tbsp cashew butter ( or other nut butter )
- 1 tbsp Thai red curry paste
- 1 tsp minced ginger
- 1 chicken breast
- salt and pepper ( to taste )
- smoked paprika ( to taste )
- 1 tbsp vegetable oil
- 1 soft boiled egg
- chopped green onion
- corn
- fried shallots ( garnish )
- Togarashi ( garnish )

Instructions
- Heat oil in a pan on medium-high heat. Season chicken breast with salt, pepper, and smoked paprika and cook in pan.
- In a pot, add 2 cups of water and the miso ramen seasoning packet. Mix in Thai red curry paste, cashew butter, and ginger.
- Bring to a boil and stir in ramen noodles to cook.
- Transfer to a bowl and add sliced chicken breast, soft boiled egg, green onion, corn, fried shallot, and togarashi.
- Enjoy!
