We love cold noodles, and this spicy cucumber version by @cafemaddy on TikTok and YouTube is a good one. Cold noodles are the ideal way to eat ramen during warmer weather. They're light, refreshing, and won't warm you up too much.

This recipe also happens to be vegetarian and vegan friendly.

Start by preparing a pack of Mike's Mighty Good kimchi ramen. While the noodles are cooking, combine gochugaru, sugar, sesame oil, Korean pickled cucumbers, ½ MMG Kimchi soup base and MMG seasoning oil.

Drain the noodles and rinse in cold water to cool them down. Add the cold noodles into the sauce you just created and mix to coat. Top with sesame seeds and enjoy!
