This easy ramen noodle recipe is what you turn to when you’re looking for something fast and cozy. With our instant and organic ramen noodles, fast is made possible. The broth becomes creamy with a kick, plus you can add any ramen toppings to this amazing base, especially tofu of chicken!
The base of this noodle bowl is a cup of Mike's Mighty Good vegetarian vegetable ramen. We added Thai red curry paste to the broth to give it an extra kick. Plus, the cilantro and lime complement the Thai flavors of the curry broth.

Thai Red Curry Tofu Ramen
This easy ramen noodle recipe is what you turn to when you’re looking for something fast and cozy. With our instant and organic ramen noodles, fast is made possible.
- 1/4 cup extra firm tofu
- 1/4 cup chopped purple cabbage
- 1/3 cup chopped cilantro
- 3 tsp Thai red curry paste
- wedged lime
Chop tofu into 1” pieces; lightly saute to brown.
Prepare 1 cup Vegetarian Vegetable Ramen according instructions. Add curry paste to the broth while hot and stir to dissolve.
Assemble bowl by topping with: sliced mushrooms, cabbage, tofu, cilantro and lime.
