  • 2 Mike's Mighty Good Chicken Ramen Cup
  • 1/4 cup coconut milk
  • 1/4 cup Thai red curry paste
  • 1 chicken breast
  • 1/2 red bell pepper ( chopped )
  • 1/3 cup cremini mushrooms
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1 tbsp peanut butter
  • juice of 1 lime
  • 1/2 cup baby spinach
  • 1/4 cup cilantro
  • peanuts ( garnish )
  • red chili flakes ( garnish )

  1. Fill ramen cups to the fill line with water. Add to a pot over medium heat and stir in oil, seasoning packets, coconut milk, and Thai red curry paste.
  2. Add the chicken breast, red bell pepper, cremini mushrooms, garlic, ginger, and peanut butter to the pot. Simmer for 15 minutes.
  3. Shred the chicken in the pot using 2 forks. Bring to a boil and add in the noodles, lime juice, spinach, and cilantro. Cook until noodles are al dente.
  4. Transfer to a bowl and add more fresh cilantro, peanuts, and red chili flakes.
  5. Enjoy!
